Apple Chipotle Pork Roast

Fall makes me think of comfort food and pork roast that has been cooking in the crockpot all day is just that. A nice slow cooking with lots of time for flavors to combine. I put the pork roast in a large resalable bag and added the Sweetwater Spice Company Apple Chipotle BBQ brine and let it sit overnight. Every few hours I moved the roast around in the bag to make sure the brine had even distribution.  (Sweetwater Spicy Company sent me the BBQ Bath Brine Concentrate to try, these are my opinions)

The next morning I put it in the crockpot with potatoes, carrots, celery, and onion. Added some broth and water and let it cook all day. This made the house smell so amazing. I love coming home and dinner is ready. So easy! 8 hours on low and dinner was ready.

 

Ingredients

 

1 cup BBQ bath Apple Chipotle

3 cups water

1 pork roast (about 3.5 pounds)

4 potatoes, peeled and cut

4 carrots, peeled and cut

4 stalks celery, chopped

2 cups chicken broth

Salt/Pepper

 

Directions

 

Combine the bbq bath and water in a resealable plastic bag, place pork roast in the bag and let sit overnight.

 

Add the chopped vegetables to the crock pot, place the brined pork roast on top, add in 2 cups chicken broth and set the crock pot to low. Cook for 8-10 hours and serve.

The roast was tender, had a nice apple chipotle flavor and the veggies were delicious. I can’t wait to make more with this BBQ Bath.

I love my slow cooker. I don’t use it enough. I agree….I love how dinner cooks all day and it’s ready when you are!

This comment is actually for the 6-ingredient dinner post, since the comments on that post are closed before the official stated ending time.

My favorite is potato skins–potatoes, cheddar, bacon, chives, and sour cream or ranch! Bake the potatoes normally, then cut them in half, scoop some potato out to make room for the stuff you’ll add, cut them in half again, and top with cheddar and bacon that you’ve already cooked and crumbled. Bake again for about 15 minutes, then top with chives and garnish with sour cream!

What an interesting product… what’s in it? I wonder if you could make such a thing at home that is apple and chipotle flavoured? It sounds tasty. :)

Apple and Chipotle sounds like a delicious combination to me. Using the crockpot is always a hit for me too.
