Big Rock!

Ron’s biggest goal of the trip was to head to Gibraltar and see the big rock. On a clear day you can see to Africa. Pretty amazing!

A creaky cable car ride later and we were at the top. The monkeys came to visit and repeatedly try to steal any tourists items they could. I was nearly in tears laughing as a monkey stole a packages of cars from a two year old. That poor little boy!

On to Sevilla to see flamenco, alcazar, the cathedral and eat more tapas! I love Spain. So much that I would seriously consider living here.

Sometimes the recipe that you make up on the fly turns out the best, enter Maple Caramel Mashed Sweet Potatoes. Peeling and cooking up a few sweet potatoes, add in a few flavorful ingredients and some pretty tasty potatoes. Usually we have leftovers but the bowl was basically licked clean!

 

Maple Caramel Mashed Sweet Potatoes

Prep Time: 20 minutes

Cook Time: 15 minutes

Serves: 4

 

Ingredients

4 large sweet potatoes, peeled and diced

1/4 cup Natural Bliss Caramel Creamer

2 tbsp Maple Syrup

1/2 tsp cumin

1/8 tsp cayenne pepper

 

Directions

 

Peel and cut potatoes into small chunks, cook for 10-15 minutes or until fork tender.

Add to large bowl and mash with a fork

Add in creamer, maple syrup, cumin and cayenne pepper

Beat with a mixer until smooth

Serve immediately

A bit sweet, smooth and warm. Comfort food that is so delicious with only a few ingredients. Something about mashed sweet potatoes to complete a meal. Served with a little roast chicken and wine to make one darn good meal.
