Slow Cooked Pork Roast with Vegetables

I spent all day yesterday baking, my annual Christmas bake. 3 kinds of cookies, chex mix and a slow cooked pork roast to start the day. Since we knew we were going to be spending 6+ hours baking away we figured why not put a roast in the slow cooker.

 

Slow Cooked Pork Roast

 

Ingredients

1 1.5 pound pork roast

2 cans of beef broth

1 15 ounce can of diced tomatoes (with their liquid)

1 8 ounce containers of mushrooms

1 small bag baby carrots

5-6 red potatoes, quartered

1 onion, roughly chopped

1 clove garlic, chopped

Salt/Pepper

 

Directions

 

In a crock pot on high, add pork roast, broth, diced tomatoes, mushrooms, carrots, potatoes, onion, and garlic.

 

Cook on high for about an hour. Turn to low and cook for additional 6 hours. Season with salt/pepper.

Nothing cuter than a guy in an apron frosting cookies. I seriously love how much Scott loves to cook and spend time together.

How was the La Cave??? Would I like it? I keep wanting to open it, but I don’t want to open a bottle that I won’t drink.

I don’t know if you would like it, it is a pretty heavy red. Maybe try a glass with someone who likes red in case you don’t like it.
