You know that recipe that your Mom, Grandma, Great Aunt (Insert Name), childhood neighbor’s Mom makes? This is one of those. I think it might be a very Midwestern, Wisconsin, Minnesota kind of recipe. But anything with butter, cheese, sourcream, and potatoes just seems Midwestern.
Nothing healthy about this one. Nothing at all. This is one of those dishes you indulge in a few times a year. For me? The Holidays are the time for Company Potatoes. I always have a few heaping serving’s of these and I will be enjoying them today at my Mom’s
Company Potatoes
Prep Time: 15 Minutes
Cook Time: 45 Minutes
Serves: 8
Ingredients
1 bag of frozen hashbrowns
1 can of cream of celery soup
1 can cream of chicken soup
1 6 ounce container of sour cream
1 onion finely diced
1 bag shredded cheddar cheese
1 stick butter melted
1 cup breadcrumbs
Salt/Pepper
Directions
Preheat oven to 350. In a large cake pan pour frozen hashbrowns in.
In a large bowl whisk together 2 cans of soup, sour cream, and onion.
Melt butter for 30 seconds in the microwave.
Pour soup mixture over potatoes. Add butter then top with breadcrumbs. Top with cheese.
Bake for 45-50 minutes
Not healthy, or full of whole nutritious foods; but, it’s good. Really really good. Especially since this was my Grandma’s recipe has been served at family functions for 50+ years. Sometimes tradition wins out.
