Healthy Fried Rice

A good Meatless Monday meal, loaded with veggies, fiber, a good amount of protein from the tofu and the leftovers taste better the next day. That is a perfect quick and easy meal for me. Scott loved this, he ate two big bowls topped with hot sauce!

Healthy Fried Rice

Ingredients (Serves 4)

  • 1 tbsp vegetable oil
  • 2 cloves garlic, finely diced
  • 4 green onions, finely diced
  • 1 tbsp peeled and diced ginger
  • 4 cups cooked brown rice
  • 3/4 cup diced red, yellow or orange peppers
  • 2 cups edamame, cooked
  • 1 cup frozen corn
  • 1 cup julienne carrots
  • 1 package cubed tofu
  • 2 larges eggs, beaten
  • 3 tbsp soy sauce

Instructions

Heat oil in a large skillet, add garlic, ginger and scallions and cook for 1-2 minutes

Add in rice, peppers, edamame, corn, tofu, and carrots and cook until heated through, around 5 minutes

Make a well in the vegetable and rice mixture and pour beaten eggs in. Stir the eggs in and cook thoroughly.

Add in soy sauce and cook for an additional minute.
