Secret Recipe Club Cake Batter Brown Rice Krispy Treats

Another month of The Secret Recipe Club and another great recipe. Something sweet which I don’t often make and a new twist on an old classic. Rice krispy treats are one of my childhood favorites! This month was, No Reason Needed from Canada, lot’s of family recipes and votes from her kids. After looking over all her many recipes I finally settled on the Cake Batter Rice Krispy Treats.

Just one minor modification for what I had in the house and these were really tasty.  The pan only lasted a few days…

Cake Batter Brown Rice Krispy Treats

Prep Time: 10 minutes

Yield: 12 thick treats

3 tbsp butter

1 10 ounce bag marshmallows

1 tsp vanilla extract

1/4 cup yellow cake mix

6 cups brown rice krispies cereal (such as Erewon)

Melt butter in a large saucepan over low heat and add marshmallows. Stir until they begin to melt and mix in vanilla.

Add in cake mix one spoonful at a time and stir until combined.

Stir in cereal so it is completely coated with marshmallow mixture.

Sprinkle in half of the sprinkles and mix.

Press into a baking dish sprayed with non-stick spray, I used a 8×8 for thick treats, and top with remaining sprinkles.

Let sit for about 30 minutes before cutting.

I am a closet rice crispy treat eater…I love the marshmallow crunchy business! But why did I never think of brown rice cereal? I don’t really buy cereal often, so I guess I never thought there was a brown rice option. I am so trying this out!
