I think of nachos as a good bar food, a happy hour snack when out with friends. Rarely do I think to make them at home. But now that I am in full use up my pantry mode I am looking for unique ways to use it all up. Enter Fajita Nachos. Born out of seeing a random packet of fajita seasoning and digging in the pantry to see what else I could find.
I figured with a pound of ground beef and good seasoning these would be pretty tasty. Next time I would add a can of black beans for even more flavor. Served over multi grain tortilla chips for a good crunch and true nacho style.
Fajita Nachos

Ingredients (Serves 6-8)
- 1 pound ground beef
- 1 cup frozen corn
- 1 14.5 ounce can diced tomatoes
- 1 red, yellow, or orange pepper diced
- 1 jar Pace Picante Sauce
- 1 package Fajita seasoning
- Shredded cheese for topping
- Hot Sauce to taste
- Salt/Pepper
- Tortilla Chips for Serving
Instructions
Brown 1 lb ground beef in a large skillet over medium heat.
Add in peppers, corn, tomatoes, fajita seasoning, dash of hot sauce, salt/pepper. Cook for 3-5 minutes or until heated through.
Serve over tortilla chips and top with shredded cheese.
