Spring Orzo Salad

The birds are chirping, the trees finally have leaves, a lot of things are starting to get nice and green. This is the perfect salad for a Spring get together, fresh vegetables, pesto, orzo and it makes enough for feed 8-10.

Spring Orzo Salad

Prep Time: 20 Minutes

Cook Time: 10 Minutes

Ingredients (Serves 8-10)

  • 1/2 box orzo
  • 1 lb bunch of asparagus, cut
  • 1 pint tomatoes
  • 2 orange bell peppers, chopped
  • 1 1/2 cups pesto
  • Salt/Pepper

Instructions

Cook orzo according to directions, usually about 8 minutes. Cool buy running cold water over it.

In a large bowl add orzo, asparagus, tomatoes, and peppers. Stir to combine.

Add pesto, salt and pepper and mix together. Chill for a few hours and serve.

Change it up by adding different veggies, cheese, even grilled shrimp or chicken would be great in this. I made a version of this for Easter and the Wines of Chile Blogger event. A party friendly salad that is easy to make the day before and cater to what people like.
