I think it is fitting that I tend to pick baked goods for Secret Recipe Club, not something I make all that often but so good when I do. These no bake bars were perfect for the our 100+ degree 4th of July celebration. I did leave them in the fridge a bit longer and put them back in mid-afternoon.
Rich, chocolaty, peanut butter goodness that really does remind me of a peanut butter cup. One was good and half the pan went pretty quickly! This months delicious treat was brought to you by Lisa of Sweet as Sugar Cookies. All about baked goods. I had a hard time picking what to make! But with 100 degree temps I didn’t really want the oven going. Love the no bake desserts.
No Bake Peanut Butter Bars
Prep Time: 15 Minutes

Ingredients (Serves 12)
- 1 c. butter, melted
- 2 c. Ritz Honey Wheat cracker crumbs
- 2 c. powdered sugar
- 1 c. peanut butter
- 1 1/2 c. semisweet chocolate chips
Instructions
Mix together the melted butter, cracker crumbs, powdered sugar, and peanut butter until well blended.
Press evenly into the bottom of an ungreased 9×13 pan.
Chill for 30 minutes.
Melt the chocolate chips and spread over the peanut butter layer.
Chill for 1 hour before cutting into squares.

That sounds delightful! My standard homemade dessert in hot weather is a variation on mark bittman’s chocolate-tofu pudding (sounds awful but actually delicious– just don’t tell anyone what it is), but I’ll have to come up with some good crackers crumbs and make this for the next surprise dinner party!
Wow, I’m intrigued. I’ve never seen a sweet treat that used wheat crackers before. But now that I think about it, it sounds pretty good!
