Feta Spinach Prosciutto and Pear Flatbread

January 8, 2013

I love ordering flat breads when we got out to eat but never really thought to make it at home. Light bulb or blonde moment, you can decide Winking smile We picked up some fire roasted flat bread crusts at Target and got to work in the kitchen figuring out the combination we wanted.

Rummaging through the fridge I found feta, goat cheese, spinach, pears and prosciutto. Sounded like an amazing combo to me. We brushed a little olive oil on the crusts and pre baked for 5-7 minutes or until they were golden brown.

Once the crusts were browned we added our toppings. Feta, goat cheese, a layer of spinach and the thinly sliced pears and prosciutto. Baked until the cheese was melting and the prosciutto was crisp enough.

Cut into squares and had our quick dinner. Sometimes the shortcuts are worth it. Yes, the crust was a little more processed but I didn’t have an hour to make dough, let it rise and roll it out. Time on a weeknight is way too valuable for that kind of cooking.

It sounds tasty. And it’s much healthier than a prepared pizza, so I say, do it. Nice one.

Don’t you just love the flavor combinations that come from combining whatever you have in the fridge?! Some of the best things come out of that sort of experiment and this is a perfect example.

This sounds like a perfect combination of flavors. I’ve done one similar but with Gorgonzola for the cheese.
