Schwan’s Giveaway

January 22, 2013

When I hear the name Schwan’s I think of frozen pizzas and ice cream. But they do way more than that! They contacted me about the healthy meal options for a giveaway. Food that has just a few ingredients and goes from the freezer to the table really quickly. Schwan’s sent me the Chicken Marinara and Tortellini Skillet Meal and the Mediterranean Vegetable Blend.

It was perfect for a Friday night when we really didn’t feel like cooking an elaborate dinner but wanted to curl up on the couch. Freezer to skillet and done in about 20 minutes. EASY. And really good too! Scott had 2 bowls and I bulked mine up a bit with extra veggies.

Our easy go-to meal when is a hurry or have nothing planned is always eggs of some sort – scrambled, over easy, with toast, etc. Kids love it!

Fun!! My current go-to quick dinner is a salad from Chipotle. Does that count? :)

For a quick dinner, I chop a few carrots and toss them in a skillet with defrosted chicken (or already cooked chicken) and canned pineapple chunks. While those ingredients are cooking, I make instant brown rice or couscous in the microwave. Within 15 minutes, everything is hot, and I combine it in a bowl with a drizzle of teriyaki sauce or BBQ sauce. Easy!

Favorite go-to dinner! I should say a Clif Bar and banana… eek. However I’ve recently discovered an amazing recipe for quick shrimp and grits (and cheese and bacon) amazing amazing.

Usually something like Orange Chicken using Trader Joe’s Orange Chicken Sauce — or maybe spaghetti.

Salad with chicken on top! Or stir-fry. Or quick chicken with instant polenta and frozen veggies
