Easy meals that are light and refreshing are the way to go on hot summer days, just a little chopping of veggies, a few minutes to cook some orzo and time to grill the seafood.
This makes a great potluck salad or a quick weeknight dinner with minimal cooking. You could substitute another fish like salmon or even used cooked chicken breasts.
Ingredients
1 bag of prewashed spinach, cut into bite size pieces
2 small cucumbers, chopped
6-8 radishes, thinly sliced
1/2 cup orzo, cooked
1 small bunch mint, roughly chopped
1 small bunch Italian Parsley, roughly chopped
3 ounces feta
Seafood Mix (I used a bag of frozen shrimp, scallops and calamari)
1 lemon, juiced
3 tbsp olive oil
Salt/Pepper
Directions
Cook the orzo according to package directions, run under cool water and set aside.
Place the chopped spinach, cucumber, radish, mint, parsley and feta in a bowl. Add in the cooled orzo.
Top the salad with juice of half the lemon and a bit of olive oil.
Create a foil packet and add the seafood in, top with salt/pepper, olive oil and the juice of half the lemon. Grill until cooked through, about 10 minutes if cooking from frozen. The shrimp should be a nice light pink color.
Add the seafood to the salad and toss together. Serve immediately.
